healthy no-mayo coleslaw

Serves 4

Ingredients

  • White cabbage, shredded - ¼ cup
  • Red cabbage, shredded - ¼ cup
  • Carrots, grated - 2 large
  • Greek yoghurt - 2/3 cup
  • Apple cider vinegar - 1 tbsp
  • Honey - 1 tbsp

Method

  • Use a sharp knife to shred the cabbage finely.
  • Mix the yoghurt, vinegar and honey together.
  • Mix the vegetables together.
  • Pour the yoghurt mixture over the vegetables and stir well to combine.

This recipe goes well with Luci’s Simple Chicken Curry if you get the chance to try it! Adding lemon is a good call. ☺
