how to build a healthy sandwich
With a nod to the good old BLT - here's a healthier version to suit meat-eaters, vegetarians and vegans alike.
Try this one:
Two pieces of good bread - try spelt, sourdough or rye.
Spread the bottom with mashed avocado, a pinch of salt and ground black pepper.
Add your favorite filling; maybe mozzarella, cottage cheese, hummus, a slice of meat - beef, parma ham, chicken breast - buy the best quality you can and try to get a minimum of free range.
Pile on a handful of leaves - spinach, lettuce, mixed greens, rocket whatever you like or have - just make sure you include plenty - more salad than meat or cheese!
A few slices of ripe tomato, and perhaps some chopped fresh herbs like basil, parsley or coriander.
Spread the second piece of bread with more avocado, dijon mustard, natural (full-fat) yoghurt or a layer of mayo.
Put the lid on and enjoy!
