luci's simple chicken curry

The great thing about this curry is that it doesn't take too much effort or fuss, just throw all the ingredients together and get on with it.

Serves 4


  • Chicken thighs - 8
  • Mild curry powder - 1 tbsp
  • Dried Thyme -½ tbsp
  • Onion Powder -½ tbsp
  • Garlic Powder -¼ tbsp
  • Turmeric -¼ tbsp
  • Paprika -¼ tbsp
  • Brown Sugar - 1 tbsp
  • Red Lentils - 2 handfuls
  • Stock - 500ml
  • Salt
  • Oil


  • Make up a mild vinegar solution in a large bowl and add the chicken. Remove the skin and fat from the chicken and rinse it under cold water
  • Drain and pat dry
  • Mix together the curry powder, thyme, onion powder, garlic powder, turmeric, paprika and add salt to taste
  • Cover the chicken with the seasoning and rub it in with your hands. Leave for 30 minutes
  • After the chicken has seasoned cook the rice according to the packet instructions
  • Add a little oil to a non stick pan and brown the chicken
  • Add the stock and sugar, bring to the boil and simmer for 20 minutes
  • After 20 minutes add two handfuls of red lentils and cook for a further 20 minutes
  • The lentils should have absorbed most of the liquid and the chicken should fall off the bone
  • Add a little water if necessary

Serve with brown rice and a side salad.
