sam's broccoli, cheese and walnut soup

Soups are one of the easiest and cheapest ways to get plenty of veg and nutrients into our diet. All of our soups can be eaten fresh or put in the freezer for a later date. If you haven't seen it yet, don't forget to check out Alex's Leek and Potato Soup video for more tips and ideas.

Serves 4-5

Ingredients

  • Broccoli - 2 stalks
  • Potatoes - 2 large
  • Onion - 1
  • Garlic - 2 cloves
  • Stock - 500ml
  • Dried Italian mixed herbs - 1 tsp
  • Cheese, grated - large handful
  • Walnuts - large handful
  • Salt & Pepper

Method

  • Peel and dice potatoes into small cubes
  • Dice onion and garlic and chop broccoli into small florets (you can include the stalk, just chop it up into similar sizes to the florets)
  • Add onion to large pan on medium heat with some oil
  • Soften onion for about 5 minutes then add garlic and fry for a further 3 minutes
  • Add the mixed herbs, potatoes and broccoli to pan and cover with stock
  • Bring to the boil and simmer for 15 minutes
  • In the meantime toast the walnuts by dry frying them in a pan for 2-3 minutes
  • Grate the cheese
  • Add the cheese and walnuts to the pan and mix to combine all the ingredients and melt the cheese
  • Add a few shakes of salt and pepper to taste
  • Blend to a smooth consistency
  • Adjust seasoning to taste
  • Serve with either a drizzle of oil and/or a sprinkling of cheese on top
