sheree's tomato, mint and sweetcorn salad
In many people's minds a salad is a boring thing that they have to eat. It often consists of iceberg lettuce, tomatoes, cucumber and maybe some red onion if you're lucky!
Salads don't have to be that way! They can be exciting and flavoursome and there are loads of different ingredients that can go into a salad other than green veg - you can mix, match and experiment until your hearts content - in the meantime, this one is a good place to start.
- Sweetcorn - 400g
- Mint - 1 large handful
- Tomatoes - 3 large
- Red onion - 1
- Olive oil
- Cook sweetcorn according to packet or if using corn on the cob, boil for 5-10 minutes
- Slice tomatoes into wedges
- Slice onion
- Tear up the mint and add to bowl with other ingredients
- Drizzle with olive oil, add a sprinkling of salt and serve
