Simple Pumpkin Stew
- Onions - 2 diced
- Garlic cloves - 2 minced
- Tomatoes - 4 roughly chopped
- Thyme - 2 sprigs
- Parsley - 1 handful, finely chopped
- Pumpkin - 1 medium, peeled and cut into bite size pieces
- Water - 200ml
- Olive oil for frying
Heat a drizzle of olive oil in a large pan and gently fry the onion for 5 minutes, add the garlic and fry for another 2 minutes.
Add the pumpkin and tomatoes to the pan and saute for 2 minutes.
Add 200ml of water and the thyme. Season with salt and pepper and stir well to combine.
Cover and cook for 15 minutes or until the pumpkin is tender.
Remove the thyme and serve with rice, polenta, baked potatoes, crusty bread or on its own with a crispy side salad.
Sprinkle the parsley over the top and enjoy!
